**RECIPE – Robbie’s Lentil Soup

Use all Organic Ingredients.

2 tbsp. extra virgin olive oil or veggie broth

1 small red onion sliced thin

2 medium yellow onions chopped

2 ½ small carrots chopped

1 ½ tsp. of cumin seeds

1 tsp. fennel seeds

2 large gloves of garlic

1 stalk of celery chopped

4 cups of water or veggie broth and 4 cups of water

1 can organic diced tomatoes or 1 large fresh chopped

1 ½ cup of lentils rinsed and picked over

Salt and pepper to taste

½ squeeze of lemon also optional

Saute’ veggies, garlic, onion and cumin for about 15 minutes in 2 tbsp. of water or oil.

Add broth, water, lentils and remainder of ingredients and bring to boil over medium high heat. Reduce heat and simmer for 30-45 minutes or until lentils are soft and broth thickens.

Makes 4 servings

**22 grams of protein!
